The book shows you how to get the full RDI of all the minerals and vitamins you need. (RDI stands for Recommended Daily Intake. ) For example we New Zealanders have the lowest levels of Selenium in the world. So you might start using this book by turning to the section on Selenium.

First of all, you will read some interesting facts about Selenium. Then follows a list of symptoms of too little Selenium in your diet (or too much).

Then comes a food chart from NZ food tests, which lists all the NZ foods with useful amounts of Selenium. This chart shows you the amount of Selenium in micrograms (mcg) that you get from eating a typical serving. ie, two eggs will give you 15 mcg of Selenium.

At the top of the food chart you will see a box with the amount in mcgs you should be getting each day from your diet for maximum energy and a good immune system. This amount is the RDI (see above). For Selenium you will see that it is 70 mcg for men, and 60 mcg for women.

Now run your eye down the chart and look for the foods you normally eat in a typical day. Add up the mcgs and compare it with the RDI. You’re almost sure to find that you’re only getting about half or less of the RDI requirement that you need for full energy and prevention of health problems.

Now look again through the food chart for good sources of Selenium. You’ll see that Brazil nuts are a rich source – 650 mcg for a third of a cup. So all you need do is eat a handful of Brazil nuts a week. This will make up your Selenium deficiency. Problem solved – it’s that simple.
